Quick Cucumber Salad


Cucumbers aren’t my favorite vegetable in the world, but this recipe helps me with my goal to eat more veggies. Cucumbers are mostly water so they keep you hydrated and full, and are incredibly low in calories. They’re also a great snack, especially if you are trying to lose a few pounds. 

This recipe is so easy and a great way to enjoy eating veggies 🙂



  • 1 cucumber
  • 1 TSP salt
  • 2 TSP stevia
  • 1 TBS vinegar
  • Fresh dill (optional)


  • Wash and slice up cucumbers into desired shape. I usually cut them in half
  • Combine all ingredients
  • Shake them all together to mix thoroughly
  • Refrigerate for at least an hour
  • Enjoy!
