I saw recipes on Pinterest for pancakes with only two ingredients: eggs and a banana. I ended up tweaking the recipe a little to make it a banana bread instead of pancake. The pancake was really hard to flip because the batter was so thin.
Ingredients:
1 Banana
2 Eggs
1/4 Tsp Vanilla
1/2 Tsp Cinnamon (can use more or less)
1/2 Tsp of Baking Powder
Directions:
Preheat oven to 400*
Blend all ingredients, I use a nutribullet or blender
Pour in a greased (I use cooking spray) pan. I usually use a 3×9 pan
Bake for 15 minutes or until golden brown and thoroughly cooked
