Hi friends! Hope you had a great weekend! Yesterday was a little gloomy, the perfect day for watching football, lighting a candle, and baking some pumpkin bread. On my fall bucket list I included making a pumpkin recipe, and this pumpkin bread recipe did not disappoint! It was easy to make, I had all of the ingredients, and it tasted delicious! This recipe also is free of processed ingredients so I’d say it’s a great healthy option. You can check out the original recipe here.
This pumpkin bread was amazing! It was moist and sweet, but not too sweet because there is coconut sugar instead of regular sugar. Jon and I both had a second helping 🙂 I’ll be making this again when I need a sweet fall treat without the guilt.

Ingredients:
- 1 cup quick oats
- 1 cup almond flour
- ½ tsp salt
- ½ tsp baking soda
- ½ tsp baking powder
- 1 tsp cinnamon
- 3 eggs
- ⅓ cup pumpkin
- 1 tsp vanilla
- ¼ cup coconut oil, melted
- ⅓ cup coconut sugar
- Chocolate chips
Directions:
- Preheat oven to 350*
- Combine all ingredients into a mixing bowl (I went in order of the ingredients list)
- Line a bread pan with parchment paper and pour the batter in
- Bake for 30-35 minutes (I baked mine 30 and it was perfect!)

I usually make pumpkin bread around Thanksgiving, but never thought to add chocolate chips to it … until now. Looks delicious. I’ll have to give this recipe a try. Thanks for sharing.
