Guilt Free: Almond Butter Protein Cookies

I recently purchased some PES peanut butter protein powder because I heard it’s the best protein for baking, and I was curious. I love peanut butter cookies, but recently I’ve been all about almond butter. I made this recipe so that I could satisfy my sweet tooth without busting my diet.

I will say that these cookies do have a protein after taste, that people not used to having protein powder frequently will notice (aka my dad). It really depends on the exact protein that you use, some don’t have any after taste at all.

This recipe only has six ingredients and takes about twenty minutes total.

Ingredients:

  • 1 egg
  • 2 scoops protein powder
  • 1/2 cup stevia
  • 1 cup almond butter
  • 3 TBS almond milk (not pictured)
  • Hershey Kisses

Directions:

  1. Preheat oven to 350*
  2. Combine all ingredients in a mixing bowl
  3. Form dough into cookies (makes 8-12)
  4. Place in oven and bake for 10 minutes
  5. Remove from oven and place Hershey Kiss on top of each cookie
  6. Let cool and enjoy

  1. Our third grade classroom mad)e these (the unhealthy way) several years for Mother’s Day gifts etc.
    Moms would come in to help, (my classroom was across from the room with the oven). Sometimes we used peanut butter chunks for extra peanut taste.
    Of course sugar is bad for you but do you have any concerns about using stevia?

    1. The unhealthy way tastes so good, peanut butter chunks are a good idea. We had some with the peanut butter m&ms at work the other day.

      I don’t have any concerns about stevia, I have read that it’s the best substitute because it’s supposedly natural, but you never know. It is at least better than Splenda

  2. Those look great! I plan on trying that recipe out soon. If I don’t like stevia, is there another natural sweetener to use?

  3. Would you reccomend this protein for baking after you tried it out or would you stick with another?

    1. I think the protein bakes well, I would still try other types. I think it’s hit or miss based on brands. My chocolate cellucor has no aftertaste, but the vanilla one does
